This is a great recipe for tasty beef and bean burritos that can be enjoyed right away or frozen individually for an easy grab-and-go meal or snack.

This recipe makes about 12 burritos.
Ingredients
- 1 1/4 pounds lean ground round or sirloin (90% lean)
- 1/4 cup finely chopped onion
- 1 1/2 cups fresh salsa
- 2 tablespoons taco seasoning
- 1 (15 oz) can black beans, rinsed and drained
- 1/4 cup water
- 2 cups shredded cheddar cheese
- 12-8″ flour tortillas, warmed

Instructions
- In a large skillet, cook the ground round or ground sirloin and onion over medium heat until the meat is no longer pink, breaking meat into crumbles; drain.
- Stir in the salsa and taco seasoning and transfer to a large bowl.
- In a food processor, combine the black beans and water. Cover and process until almost smooth.
- Add the beans to the beef mixture.
- Stir in the shredded cheese.
- Spoon 1/2 cup of the beef mixture in the center of each tortilla.
- Fold the ends and sides over the filling and roll up.
- Enjoy the burritos or wrap them individually in wax paper and aluminum foil and freeze for a quick meal on a busy weeknight.
Notes & Variations
I prefer black beans, but pinto beans work just as well.
These burritos freeze beautifully. Wrap individually in wax paper and foil, then store in a freezer-safe bag for up to 3 months.
