These chicken salad croissants are one of my favorite go-to meals when I want something simple, fresh, and a little elevated. They’re perfect for lunch on the patio, a light dinner, or even serving to friends when you want something that feels special without a lot of effort.

- Total Time: 40 minutes
- Servings: 10-12 (when using small croissants)
Ingredients
- 1 1/2 pounds Chicken Tenders
- 32 ounces Chicken Broth
- 1/2 cup Mayonnaise (I like Hellman’s)
- 4 tablespoons finely chopped celery
- 2 teaspoons dry Ranch salad dressing mix
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper

Instructions
- Poach the chicken tenders in chicken broth. Fill a large pot with the chicken tenders and chicken broth. Poach over medium heat for 15-20 minutes or until the chicken is fully cooked.
- Shred chicken. Place in a stand mixer and shred using the flat beater or shred by hand using 2 forks.
- In a medium sized bowl add celery, mayonnaise, dry Ranch dressing mix, salt and black pepper. Stir until well blended.
- Add shredded chicken and mix well.
- Store chicken salad in an air tight container for 2 hours before enjoying.

Notes & Variations
I love to spread the chicken salad on a small croissant with a bit of lettuce. You can also enjoy on bread as a sandwich or directly on a bed of lettuce.
