I love to serve these Turkey Egg Rolls as an easy appetizer for gatherings with friends or as a quick weeknight meal. They’re packed with lean ground turkey, vegetables, and just the right amount of spice, all wrapped in a crispy egg roll wrapper and baked until golden.

These baked egg rolls pair perfectly with fried rice, egg drop soup, or a simple dipping sauce for a delicious homemade takeout-style meal.

Ingredients

  • 8 ounces lean ground turkey
  • 1/2 teaspoon kosher salt
  • 1/4 cup chopped onion
  • 2 tablespoons chopped red bell pepper
  • 1 garlic clove, crushed
  • 1-4.25 ounce can diced green chiles
  • 1/2 cup frozen spinach, thawed and drained
  • 1/4 cup frozen corn kernels, thawed
  • 1/4 cup canned black beans, rinsed and drained
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon Mexican chili powder
  • 12 egg roll wrappers
  • 3/4 cup shredded pepper jack cheese

Instructions

  1. Preheat oven to 400 degrees. Coat a baking sheet with cooking spray.
  2. Heat medium skillet over medium-high heat.
  3. Add the ground turkey and salt.
  4. Cook, using a wooden spoon to break the meat into small pieces as it browns, about 4 minutes.
  5. Add the onion, bell pepper, and garlic and cook stirring, until tender, 2 to 3 minutes.
  6. Add the green chiles, spinach, corn, black beans, cumin, and chili powder and cook, stirring for 3 to 4 minutes.
  7. Place an egg roll wrapper on a clean work surface with a corner facing you.
  8. Spoon 1/4 cup of the turkey mixture at the bottom corner and top with 1 tablespoon cheese.
  9. Fold the bottom corner over the mixture so that It covers it completely, then roll to the center of the wrapper.
  10. Fold the left and right corners into the center to form an envelope.
  11. Roll the wrap upward one time, leaving the top corner open.
  12. Wet your index finger with a little water and moisten the corner.
  13. Fold the corner down to seal the roll.
  14. Repeat for all the rolls and place on the prepared baking sheet.
  15. Coat each roll with cooking spray.
  16. Bake until the rolls are crisp and golden brown, 6-8 minutes per side.

Notes & Variations
